Our story
We took a tenement cellar two streets from the Old Market Square, knocked through the back wall and put a hearth where the kitchen used to be. Everything we serve passes over it — vegetables buried in embers, fish grilled on birch, bread baked in the falling heat at the end of service.
The cooking is Polish, but not nostalgic. We use the pantry our grandmothers used — buckwheat, sour cream, plums, horseradish, fermented cabbage — and let the fire do the rest.

Wild garlic, sorrel, meadowsweet and young spruce come from the woods around Puszczykowo. What we can't forage, we grow in the courtyard beds behind the dining room.
Trim becomes stock, stock becomes sauce, ash becomes the salt we finish with. Ferments start months before they reach a plate.
The chef
“Fire is not a technique here. It is the first ingredient, and everything else has to earn its place beside it.”
Marta grew up in a house outside Śrem where the stove was lit before anyone spoke. She cooked for six years in Copenhagen and two in the Basque Country, then came home in 2019 with one condition for her partners: the kitchen would have no gas.
